Sweet potato chips, tomato and cheddar cheese lunchtime snack

Sweet Potato Chips, Tomato and Cheddar Cheese Lunch Bites Recipe

Serves: 2 to 3 servings

Total Times: About 30 minutes

Ingredients:

  • 1 large sweet potato, shaved
  • 2 large tomatoes, sliced
  • 150g Cheddar Cheese sliced
  • Sea Salt
  • Black Pepper

Method:

  • Heat the oven to 190C/375F
  • Slice or shave the sweet potato into very thin rounds and place in a large bowl.
  • Add the olive oil, sea salt and black pepper and toss with your hands until thoroughly coated


  • Spread each of the sweet potato slices and make sure they don’t touch each other
  • Bake for about 20 to 30 minutes, or until the chips are crisp to the touch.
  • Slice the tomatoes and the cheddar cheese and decorate around your dish
