Sweet Potato Chips, Tomato and Cheddar Cheese Lunch Bites Recipe
Serves: 2 to 3 servings
Total Times: About 30 minutes
Ingredients:
- 1 large sweet potato, shaved
- 2 large tomatoes, sliced
- 150g Cheddar Cheese sliced
- Sea Salt
- Black Pepper
Method:
- Heat the oven to 190C/375F
- Slice or shave the sweet potato into very thin rounds and place in a large bowl.
- Add the olive oil, sea salt and black pepper and toss with your hands until thoroughly coated
- Spread each of the sweet potato slices and make sure they don’t touch each other
- Bake for about 20 to 30 minutes, or until the chips are crisp to the touch.
- Slice the tomatoes and the cheddar cheese and decorate around your dish
